Currently, the Domain is cultivating 7.5 ha of its own vines in 7 different villages of the Côte de Beaune region in integrated production. The respect for nature, the observation, listening, feeling, tasting and smelling are equally important to us as are the applied oenological knowledge, the state-of-the art equipment and the traditional Burgundian viniculture.

We consequently plough the soil instead of using chemicals for weed control. We fertilize our soil with horse and cattle manure. Pesticides are only selected and used upon professional evaluation of the situation and the use is limited to a minimum.

The grapes are harvested manually and brought to the fermentation cellar in small fruit crates of ap-proximately 12 kg, as fresh as possible and without being squashed. Our tanks used for the alcoholic fermentation are thermo-regulated, allowing a controlled extraction of polyphenols and colorants in cold maceration.

A rigorous selection of grapes takes place both in the vineyard and the cellar. 4 to 6 pairs of human eyes and hands at the conveyor table, a vibrating shaker table and the mechanical picking-off of the berries with a destalking machine ensure that only impeccable grapes are put into the tank.

Two different hydraulic wine presses provide gentle, gradual pre-pressing and pressing of the berries.

In the Burgundy region, 10,000 vines per hectare only yield 35-50 hl. of red wine (Pinot Noir) and 45-50 hl. of white (Chardonnay). Compared to the southern wine-growing regions where one hectare contains only a couple of thousand vines, this corresponds to a significantly more rigorous harvest reduction based on the same yield per hectare.

All our wines are ageing in the basement of the castle in French oak barrels, so-called pièces with a content of 228 litres for 12-18 months. During this time, they are doted on, their development is monitored, they are constantly analyzed, and above all, tasted.

Following a period of rest which is required after the assemblage of the very different barrels with correspondingly variable properties, depending on the manufacturer, the wines are then carefully bot-tled by means of gravitation using the equipment on site at the Château de la Crée. The wines are only filtered and refined if necessary.
